Learning to analyze sensor graphics

Hello, they have given me the freestyle sensor and I see that there are foods that make me a lot of peak, above 180 reaching even 215 but that that peak lasts little and in half an hour I am again below 180 and it goes down.Other times I do not go up so much but two/three hours are maintained in 160 +/-.Which of the two things is worse?I want to see what foods do me more.

Sudden climbing and declines deteriorate tissues and organs.
