The first thing, do not overwhelm, is a time to enjoy it and have a good time.

You don't have to wait 3 hours.Estimate time since you put the first dose and when they put the first dish.If 1.5 hours have passed, you will have active insulin, so put less units to not overlap and enter hiccup.
Insulin usually lasts about 2.5 hours and takes effect between 30 and 90 min of having injected it according to people.

Keep in mind that fats go up later so you can be short and in desserts or glasses see how glycemia rises.
It is better to have a hyper and correct than hypos.
